This recipe is currently an absolute favourites in my new found low carb life. I’m only  three months into low carb living and honestly, it hasn’t been as hard as I thought it would be. From ucook meals, to pinterest recipes, there are so many delicious meals that i’ve been trying and this is one of my easiest and most delicious, so naturally I thought I’d share. 


1 packet Zuchinni Noodles or Carb Clever Spinach & Cauliflower Noodles  (Woolworths)

2 Chicken breasts

1 avocado

1/2 Lemon

1/2 cup fresh basil

3 garlic cloves/ 2 tbs crushed garlic

3 tbsp pine nuts

2 tbs Sundried Tomatoe

1 tbs Olive oil

Salt & Pepper

Chilli Flakes 

Prep Time : 20 minutes

Creamy Sauce : Peel Avocado and cut up into pieces. Toss into blender together with Basil, garlic, Squeeze of Lemon, pine nuts,  olive oil,  salt and pepper . Taste the mixture to suit your preference.

Chicken : Season two skinless chicken breasts with salt and pepper as well as chilli flakes (if you like hot food like me). Cut the breast into cubes and pan fry with olive oil. Allow to stand and cool.

Zoodles : Cut 2cm hole in top corner of the packet of zoodles, place on microwave tray for 2-3 mins. Allow to stand.

Mix all the ingredients together in a large bowl,  top with sundried tomatoes and Enjoy!

Hi Cass, I love this meal. I’ve been thinking of trying the zoodles. I’m also into the low card life, it’s soo worth it.
